Vegan sugar free rum balls
I really hope you know what rum balls are. If you are from Scandinavia or indeed Germany then the chances are that you do. For those of you that haven’t a clue, let me explain. Rum balls are the greatest thing in the world. When I was a kid, a rum ball was a huge huge treat. My mum would get me one from the bakery and I would gobble it up. I was convinced it was a grown up treat and that would get tipsy from all the alcohol. No one else in my family liked them but I LOVE them. The Norwegian way to make them is by combining biscuits, toasted almonds, chocolate and rum before rolling in chocolate sprinkles. The Danes on the other hand, use left over Danish pastries and combine with cocoa, rum and sugar.Living in Germany for two years rekindled my love affair. It turns out that the Germans make rum balls too and they make theirs using stale or left over cake. In comparison, Norwegian balls are the size of a golf ball, here in Germany they are the size of a cricket ball. They are huge, I have only ever had a bite of one. They are not a one person treat. Yesterday we had a birthday brunch to go to and I wanted to make a little treat to share so I made my own healthier version, vegan sugar free run balls. I hope you like them.
Ingredients
100g oats
2 tbsp raw cacao
2 tbsp date syrup
2 tbsp strong espresso (cold)
1 tsp rum (or rum essence)
1 tbsp coconut oil
2tbsp dessicated coconut
Method
Place the oats & cacao into a food processor and blitz until you have a fine crumb
Add in the rum, coconut oil, date syrup and espresso and continue to blend until you have a ball of sticky dough
Roll the dough into small balls and then roll each ball in the coconut
Chill for 30minutes before eating
