Vanilla cashew vegan milkshake
I really want to be able to describe this to you in perfect detail. The idea for this milkshake has been in my head for a few weeks after my bestie requested that I made one. We were talking almond milk and ‘mylkshakes’ but really we were lamenting over how much we missed the super thick, luscious milkshakes. Brainfreeze milkshakes. Milkshakes that are a meal in themselves. I need different words than I have to describe this drink. Thick, decadent, slurpy. None of them are quite right. None of them conjure up the image that I want you to have. None of them will make you read, then nip into your kitchen, get out the blender and make this. Then stand in your kitchen drinking this out of the blender jug bewildered by how a few simply ingredients can make such amazingness.
The only way I can describe this vanilla cashew milkshake and purvey its splendor is to say that I have created the clean, vegan version of a McDonalds milkshake. Not that any of us have ever had one ever…. *awkward silence*
This milkshake is plant based foods at their best. It is using the essence of an ingredient, combining it with others and letting them shine. No tricks, no nothing, just really good, honest, clean food. Cashews are of course high in fat but it is in the form of oleic acid which is the heart healthy kind. The magnesium in the nuts also helps to lower blood pressure and along with the calcium in the almond milk it will help protect our bones. Cashews are are also a natural mood booster and they have the same effect on our mind as chocolate! Using dates as a sweetener adds a little fibre but also ensures that there is no sugar spike or crash. Dates are super sweet but they also have a lower GI. I chose to make vanilla milkshake for nostalgic reasons but if you fancy adding in some fresh strawberries or a spoonful of raw cocoa then do whatever you fancy. This is your milkshake!
1/2 cup cashews
1 cup smashed ice cubes
1/2 cup almond milk
Seeds from 1/2 vanilla pod (or a splash of vanilla extract)
Scrape the seeds from the vanilla pod into the blender jug
Add all the ingredients to a powerful blender and blend well for 5 minutes until you have a thick, creamy milkshake
