Sweet potato brownies
These are lick the bowl clean, wait impatiently by the oven, eat them whilst they are still warm brownies.They are made for sharing with friends with a cup of tea and a good belly laugh.
They are also vegan, refined sugar free, grain free and contain a vegetables. I mean seriously, could it get any better?
Eating gluten free can sometimes be a challenge but these brownies are a real crowd pleaser and can easily be made a few days ahead.
These are satiating brownies, packed with healthy fats. You won’t experience the dreaded sugar high and thus there will be no sugar crash. They would make a great post training treat and are a perfect afternoon pick me up.
Sweet potatoes are an amazing source of nutrients. They are packed with antioxidants including beta carotene which helps your body repair UV damage to cells. They are also packed with fibre which helps regulate blood sugar, keep you satiated and of course ensures a happy digestive system. They are also high in Vitamin B6 which helps protect against the hardening of the arteries and keeps the blood flowing freely, thus supporting a healthy heart.
1 large sweet potato peeled and grated (or one cooked sweet potato peeled )
2 eggs (or 2 chia eggs)
2 tbsp coconut flour
4 tbsp cocoa powder (unsweetened & preferable raw)
2 tbsp melted coconut oil
2 tbsp melted honey/date syrup/agave
1 tsp gluten free baking powder
1 tsp baking soda
Preheat oven to 160oC
Combine all the ingredients in a bowl and beat well to combine
Pour into a well greased dish, non stick dish or silicone moulds
If baking as a dish bake for approx 25mins or until a toothpick comes out clean
If baking as individuals then bake for approximately 12minutes
Serve with whipped coconut cream and enjoy
