Noodle lunch jars
Lunch time can be the most beautiful time of the day. A time to stop, pause for a moment and refresh. Stand up, stretch a little, eat well and carry on filled with energy. For most of us though, that is just a little dream. Lunch is a stolen few minutes in the day where we need to eat as quickly as possible and carry on. I wanted to make a clean, healthy lunch that was packed with flavour, easy to make and filled with vegetables. This noodle lunch jar ticks all the boxes. You can make these up at home the night before or just as you are leaving. They are super easy to transport, they are very desk or park bench friendly and the possible flavour combinations are endless.
You start with a flavour base which could be miso. You then layer up with julienne vegetables, spices, then noodles and then top with an added flavour punch such as fresh herbs. All you need to do when you want your lunch, is open the jar, add boiling water, close the jar for 2 minutes and then stir and enjoy.
I made this one with harissa, miso soup and vegetables. As my herbs I added coriander but the options are endless. You could layer on pickled ginger or spring onions. As your flavour base you could start with kimchi, and then add in sliced mushrooms and other finely sliced vegetables. Grated creamed coconut, curry paste and coriander with your noodles would give you almost instant thai green curry. The noodles you use here are important as you need ones that will cook instantly in the boiling water. Instant rice noodles, pre cooked udon noodles or vermicelli soya noodles are all great options.
1 tsp dark miso paste
1 tsp grated ginger
0.5 tsp soya sauce
1 tsp harissa or 0.5 tsp chilli flakes
1 nest instant rice noodles
2tbsp fresh chopped coriander
Place the miso paste, ginger, soya sauce and harissa into the bottom of the jar
Julienne or very finely matchstick the the courgette and carrot and place into the jar
Add in the noodles and then place the coriander on-top
When you are ready to eat, pour in enough boiling water to just cover the noodles
Close the lid and wait 2 – 3 minutes
Stir well and enjoy
