Lisa’s cookie dough ice-cream
One ingredient, instant soft serve ice-cream. You don’t need an ice-cream maker. You don’t even need patience. One ingredient that can be whipped into perfectly silky ice cream without the need for additional sweeteners or dairy. Its an afternoon treat, a Sunday night instant pudding. Its a crowd pleaser amongst friends who are paleo, vegan, detoxing or dieting. Its the ultimate ice-cream with endless flavour possibilities.
And what is the one ingredient?… banana. This humble athletic fruit transforms into amazing silky ice-cream. Who knew.
You can go au-naturel if you like. Slice and freeze a banana and then simply place into a food processor and blend until you have a silky, creamy consistency.
For me, this is the starting point, the blank canvas. I add in a splash of almond milk, one date, more cinnamon than seems necessary and a scrape of a vanilla pod. Often I stop here. I scoop it into a frosted sundae glass and sprinkle with flaked almonds and bee pollen.
But sometimes you just have to go one step further. Sometimes you have to spend all afternoon creating raw cookie dough balls so that you can crumble them into the ice-cream. Sometimes you have a friend in Nashville that you are missing, whom you know will curse loudly when you tell her about this recipe. You know that she will smile all day because of it and that she will make two batches, eat them in an instant and call it recipe testing. You will make it as a thank you for the friendship, for the regular skype calls and the unending support. You will make it because she makes you feel good, because she calls your abs epic. You will make it because you wish that you could be there making it with her and this is the next best thing.
Bananas contain pectic which aids and soothes our digestive system. They also contain natural prebiotics which stimulate the growth of friendly bacteria. Post training they will also help restore lost electrolytes and help cool the body.
To make this combination, start with the cookie dough. This is raw and vegan and packed with healthy fats. Roll into balls and place into the freezer. Then make the icecream. Once you have it made, crumble two of the cookie dough balls into it, stir through and place back into the freezer for 10minutes. Delicious.
1 banana (per serving) sliced and frozen
1 medjool date
3 tbsp cinnamon
50ml almond milk
Place all ingredients into a food processor
Blend until you have a smooth, creamy consistency
Raw cookie dough (makes 8 -10 small balls)
4 tbsp ground almonds
1 tbsp coconut flour
2 tbsp maple syrup
1 tsp rose water
50 g raw chocolate smashed into small pieces
Place all the ingredients except the chocolate into a food processor. Blend until a dough forms
Remove from the processor and knead the chocolate through the mixture
Roll into small balls and place into the fridge
